Next, 100 liters of this stock solution are transferred to another container. Here, 2 kg of coconut oil, dissolved with 50 g of emulsifier, is slowly added while stirring. To enhance flavor, 2 grams of black pepper, 5 grams of monosodium glutamate (MSG), and 10 grams of salt are mixed in. The temperature is maintained at 60°C, and the mixture is homogenized through continuous stirring. Once ready, the drink is bottled and served as a creamy, aromatic health beverage. Another method involves using the mushroom mycelium through fermentation. In one liter of coconut water (or other fruit juice as an alternative), 45 grams of glucose, 0.3 grams of potassium dihydrogen phosphate, 0.3 grams of dipotassium hydrogen phosphate, and 0.2 grams of magnesium sulfate are dissolved to create a nutrient-rich fermentation broth. This solution is then sterilized using steam in a pre-sterilized tank or vessel. After cooling to approximately 25°C, the fermentation process begins. The mixture is stirred at 120 revolutions per minute while sterile air is introduced at a rate of about 400 ml per minute per liter of culture. Fermentation continues for around seven days. Once complete, the mycelium is separated by filtration, pasteurized, and packaged into smaller portions. A suitable amount of sugar is added to balance the taste, resulting in a unique and nutritious mushroom-based health drink. Both methods offer distinct ways to harness the potential of shiitake mushrooms, ensuring a delicious and healthy beverage that can be enjoyed by many.
