Native to lakes across northern and southern China, the most renowned variety comes from Yangcheng Lake in Jiangsu Province. This species is typically harvested during the late summer and early autumn months when their meat is at its peak flavor and texture.
Description:
The body of the crab is divided into two main sections: the cephalothorax (head and chest) and the abdomen. It has five pairs of walking legs. The cephalothorax is covered by a hard carapace that is dark green in color. The shape of the carapace is square, with a hexagonal pattern near the front. The back half of the carapace is broader than the front, and the center is slightly raised. The surface is uneven, featuring six ridges or bumps, along with depressions on the front and liver areas. The front edge of the carapace has 12 small teeth-like structures, giving it a ratchet-like appearance. On either side of the forehead, there are two compound eyes mounted on stalks, allowing for a wide field of vision.
The ventral side of the carapace is mostly separated into plates, with dense hair covering the area. The abdomen is attached beneath the cephalothorax, commonly referred to as the "crab navel." This region is surrounded by fine hairs and is segmented into seven parts. In females, the abdomen is round and often called the "umbilical cord," while in males, it is more triangular and known as the "narrow umbilicus."
The first five pairs of legs are elongated and prismatic, ending in pincer-like claws. These legs are covered in thick, dense hairs, providing grip and strength. The fourth and fifth legs have flat, rounded feet with sharp tips, resembling needles, which help the crab move efficiently through muddy or rocky environments.
