Crystal rice processing technology

The non-scouring rice produced by the seepage method is called "crystal rice," and it has the advantages of containing less glutinous rice flour, pure rice, white beige, and good gloss, and is the main product for the export of rice in China. Its processing method is as follows.
1. Water seepage grinding. It is different from the whitening effect of the rice mill on rice grains, and only grinds the surface of rice grains. The purpose of water seepage in grinding is to make the water molecules form a water film between the rice grains and the working components of the grinding chamber and between the rice grains, which is conducive to smooth and delicate grinding. Another purpose of water seepage is to “wash” the surface of rice grains with the help of water, so that the powders deposited on the surface of the rice grains are cleaned. In order to improve the process effect of water seepage grinding, it is best to infiltrate hot water during grinding. There is no specific equipment for penetrating water milling. Normally, iron roller rice mill is used (Fuji Machinery Factory, Luancheng County, Shandong Province, telephone: 6126228). However, the rice machine exit needs to be dismantled to exit the rice knife and the rotational speed is adjusted to 800 rpm. . When grinding, hot water infiltrates through the rice machine inlet. The amount of infiltration depends on the type of rice and the original moisture, generally 0.5% to 0.8% of the rice flow. In addition, the mill room in the lower part of the two-roll mill can also be improved for seepage grinding. The main point of improvement is to drill a hole in a rice sieve at the outlet of the rice polishing chamber and insert a copper tube with an inside diameter of 3 to 4 mm. The other end of the copper tube is connected to the tank with a hose. Wipe the rice in the front section of the rice room and infiltrate the water in the rear section.
2. Cool. In order to reduce the rice temperature after water seepage grinding, the rice needs to be cooled. The commonly used equipment is a fluidization tank or a wind separator (Shanghai Grain and Oil Machinery Factory Jiangdu Branch, Tel. 6941408). When using the fluidization tank for cooling, not only can the rice temperature be reduced, the rice grains can lose moisture, and the floating raft in the rice stream can also be sucked away. When the fluidization tank is in operation, the air volume must be properly controlled and the rice grains and air flow must be in full contact.
3. Grading. Penetration milled rice grains often contain lumps of lumps and should be sieved after cooling. The upper sieve surface has a size of 55 mesh/25.4 square millimeters, and the lower sieve surface uses 1414 mesh/25.4 square millimeters. The agglomerates of lumps larger than the rice are sieved and the fine powder is sieved respectively.
